Depends on your distribution of Unix.

With redhat, you can use linuxconf or chkconfig
or rpm -e and delete the package that contains the
startup script.  I don't use nfs, so I do
rpm -e nfs-utils
and besides removing the nfs stuff from the
startup scripts, it removes other un-needed files.

You can also delete the symbolic links from the
/etc/rc.d/rcX.d directories.
