Rusty is correct, usernames are just friendly to us humans. they are
resolved to UIDs.
You could also create the correct user from scratch then change it's UID to
that of the incorrect user. Then disable the incorrect user or remove the
line in /etc/passwd all together.

That should about do it so long as you don't change the UserID #.
Changing the UID would entail a bunch of find(1) and chown(1).
