I liked RH 7.3 and the Ximian Desktop.
8.0 gives me Gnome2 which is ok as far as an end user desktop
goes. I've been using RH8 at work on a daily basis for several
weeks. I don't miss my RH7.3 system at all.
The Ximian Desktop doesn't do Gnome2 yet, but the Evolution
Main and Pan News Reader and Mozilla all work fine.
I probably wouldn't upgrade a web server that didn't have
X-Windows installed. If you don't want to go from Gnome1
to Gnome2 then you probably don't have a great need to
upgrade.
There are a lot of system configuration tools and things,
but they seem to be GUI orientied. If you don't need a GUI
update, then stick with what works.
You can always update the Kernel and non-gui libs.
When you want to upgrade the GUI, there is usually a lot
of packages that are involved that all have to be
upgraded at once and your changes of a manual upgrade
on a package by package basis are pretty slim.
