I'm a little confused ;(

You want Box 1 to have mail stored on it.  Box 2 is a workstation where 
a user can login and get his/her mail from Box 1?  Or Box 2 collect all 
of the mail from Box 1?

If Box 1 receives the mail then run IMAP on Box 1 and have Evolution 
access that IMAP server.  If the mail is all under a single user name 
have evolution use that user name and password for each user when 
reading the mail.  If the mail is for different users then Evolution 
shouldn't need any special tuning.
