I was going to stay out of this BUT ;)

I find that most top posters do not snip the original message down to 
just the parts they are responding to.  To me it feels more natural to 
see a couple lines from the post being responded to and then the 
comments on that.

Kind of like reading any other writing style where the premise for the 
remaining content is setup first, then the meat and potatoes.  When a 
top post is read top to bottom you get a comment and the have to go 
further to find out what the comment was referring to, and then back to 
where you were.

List etiquette calls for removing the parts of the original that are not 
related to the response.  That would include headers.  Others have no 
need to see the addresses that were in the original.  I don't need, or 
want, a complete copy of any post that I've already seen.  If I see part 
of an old post and then content, I know that the comments are related to 
THAT part of the post.
