The Nokia Series 60 phones (3650, 7650, N-Gage, 6600, etc -- see
http://forum.nokia.com for more details about Series 60) all support
sync over Bluetooth using either SyncML or some Nokia protocol
(depending on the phone model).
Anyway, I know a few people who sync these phone with Linux. If you do a
google search for "3650 and Linux" you'll come up with some good info.
Disclaimer: I work at Nokia but I have nothing to do with either these
phones or Linux there :)
