I doubt the wiring will be the problem.
On each scan - the 72 times per second if you run your monitor at 72Hz -
only the changed portion of the screen is sent. Realistically, for most
(non-gaming/video) applications, only a tiny portion of the screen is
actually changed on each scan - this is why these remote control
applications are usable (not great but usable) over dialup.
Some back-of-the-envelope calculations.
1024 x 768 x 24bit color x 72 fps is just under 1.3Gbps.
If only 1% of the screen changes each frame (and even that is high), that's
13Mbps, double it for overhead and you're still well within 100BaseT.
