I've been doing this too. I used xmpgedit. It's marks beginning and
ending of tracks as you listen to it and writes out the edited mp3 files.
I use mpg321 to convert to wav and cdrdao, with a toc file, to write to
audio cd's. Your mp3 bit rate determines how large the wav file will be
when you uncompress it.
