Yes, many do use adaptive cut through methods for reduced latency.  It
all depends on your switch.

Not always.  Using greater than 1500 byte frames for Ethernet can be an
issue.

It all depends on what kind of throughput you need.

retraining for the latter, omitted "software assurance" costs in 
compatible desktop OS/apps for the former, no free/legacy reuse for
latter, and no basic security, patch or downtime comparison at all.
