Ok, so I used Google to look around. One venue that jumped up is Quakecon.
In 2005 they had:
* Total Attendance: 6,000+
* BYOC Size: 3,200
* Location: Gaylord Texan Resort and Convention Center, Grapevine, Texas.
However there is this also:

So no idea when or where. Might be worth investigating.

This is kinda short notice, but at least it is a technology thing. I think
this is a small group. See http://barcamp.org/ for an expalination.
Also, what about First Saturday or Third Saturday? There used to be a Linux
booth set up at First Saturday, but it has been gone for a long time.
