I use postfix and postgrey as stated by Preston. Postgrey is really
pretty nice, but a lot of spammers are starting to get around this.
I use courier IMAP for IMAP access.
My mail is stored in Maildir format.
I use spamassassin.
I also use ASK. (Active Spam Killer) http://a-s-k.sourceforge.net/
ASK is a challenge response process.
For webmail I like IMP for Horde. (www.horde.org) Horde is a framework
for many applications. (Calendar, mail, rss, address book, etc)
I hope this give you some more suggestions to look at.
