That's actually completely unavoidable.

The telephone circuit at the telephone exchange feeds a little of your
own voice back into the earpiece because without it the line sounds
somehow 'dead'.  That being the case, it's impossible to avoid recording
your own outgoing conversation - at least at some reduced volume level
because it's mixed into the incoming sound.

These days, that ancient anachronism is a pain in the neck for computers
and telephones - it would be much better if the telephone handset itself
did that - but plain old telephones and telephone exchanges havn't
changed much over the past 50 years - so don't expect that to change
anytime soon!
