I haven't done it with a full distro, but I've created a linux rescue USB
memory stick using the instructions from this web site:

http://www.sysresccd.org/Howto_install-usb-stick

I couldn't boot all my computers from it, but one that let me specify to
boot from USB in the bios worked pretty well.  Since I booted from it, I
didn't try unmounting it while it was running. I would assume this would
work as well with a USB drive as with a memory stick.
