You're wise to be cautious.
As far as "how do I go back" goes, the way FC6 is set up, it keeps two
kernels at all times. So if you do a kernel update, the oldest is removed,
the new one is installed and the one you were using is set into the number
two position.
To go back to the previous kernel, press a key during the GRUB boot screen.
You will get a menu. You can then select the previous kernel to boot
from.
It gets a little sticky when you're using proprietary video drivers and
precompiled kernel modules and stuff like that from Livna and similar
repositories though. I see it as a potential problem against being able to
go back to the previous version, but *knock wood* a problem has yet to
actually occur.
As to the selection and stuff? You might consider just turning off the
process that does the auto-update thing at startup and simply run YUMEX on
your own from time to time.
