[NTLUG:Discuss] replacing old software raid1 with new software raid1

Ok... so what happens when one wants to UPGRADE disks in a server using 
software raid?   The 'source' disks will be something like /dev/md0 
through /dev/md4.    How would one copy the information from the source 
disks to the new and *larger* destination disks without mucking around 
with having to setup and live with /dev/md5 through /dev/md8 ??

Can a RAID set be 'broken' and then one half of the drives have their 
raid/'md status' removed so that they are not considered a /dev/md* device?
