Cinelerra and avidemux seem to be all there is with regards to mature GUI editors, but there's also many command-line tools for transcoding/cropping/scaling/etc. like ffmpeg and mencoder.

If anyone's interested in OpenGL screen capture, there's a neat app I found the other day that handles it adeptly:
