VMware works well although the overhead can get expensive the harder
you hit your web servers.  Xen does a little bit better in the
efficiency side and is probably mature enough to use today.   The
management tools aren't as pretty as VMware's but they do the
job and have a very nice price tag :-)

If I was going to do it today I'd use Xen.  If I was making a
recommendation for my daughter it would be VMware.
