Until you move them.. I think even the MS-DOS FAT and NTFS still
loose that information.  However, the "last modification time"
will still reflect the date taken, until you attempt to edit
them.

If you shoot as JPEG's, the EXIF information still exists, and
is still there.. Various tools exist to display that
information.
