I second the use of dovecot if you want something very simple to setup.
With regards to postfix, I USED to think that postfix was easy (not
saying that it can't be easy), but went to a postfix class and learned
that you can literally have 10's of thousands of configuration
parameters at a large site (making sendmail look easy).
But, I in general, postfix is easy to setup (for an SMB, no problem),
and I do use dovecot vs. the others just for ease of setup.
