I primarily use Ubuntu server for the servers I work with and have had
to face this decision recently. The interesting thing is that the
current LTS (long term support) release (Hardy, 8.04) is supported
until April, 2013 (LTS server is supported for 5 years), where the
most recent release 9.10 is only supported until April, 2011. I have
been sticking with Hardy now with plans that I will have to reinstall
completely before 2013 (of course if the world end in 2012, I won't
have to worry about that :) ).
Generally "upgrading" from one release to another on a server always
scares me anyway, so right now I am sticking with the current LTS
release and will have plenty of time to plan a migration path to the
next LTS.
