I would consider looking at some of the classes at TCC.  I am not sure
of the prerequisites for the classes, but they may be able to take
some of the higher level ones without going through the entry ones if
they audit them (take them for no credit).  I have a friend that is
more of a total newbie that wanted to try to learn to setup and
administer his own server, so he took their intro to server
administration class.  The requirements for the class were just a
general working knowledge of Windows (which he does fine).  He has
been bringing me his homework/projects to help out with (they are
doing both Linux and Windows server stuff) and there is a lot of
things I have had to either look up or that I just plain didn't know.
I am no expert by any means, but I have a CS degree and have been
doing Linux system admin for about 7 years.  I would have hoped I
could "breeze" though an "introductory" class with no issue.

I guess it may depend on the professor, however.
