For converting files, I've had really good luck with WinFF.
Don't be discouraged by the "Win" part of the name -- WinFF is
available for Linux. On Ubuntu, I just do "sudo apt-get install winff".
For quick-and-dirty video editing I really like Kino. It
can import raw AVI and DV files and do some non-linear
video editing. Once I have the video the way I want, I then
use WinFF to convert it to other formats that are easier for
others to view.
