I use wine all the time, never had to uninstall it though. :)
But everything other than wine proper (which the rpm -e, or yum commands should remove for you) is stored in:
~/.wine/
Where "~" means your user's home directory. Mine looks like this:
$ ls -la .wine/
total 1508
drwxr-xr-x 4 john.fields users 4096 May 23 14:35 .
drwxr-xr-x 72 john.fields users 4096 May 22 15:50 ..
drwxr-xr-x 2 john.fields users 4096 Mar 28 16:18 dosdevices

-rw-r--r-- 1 john.fields users 43471 May 23 14:35 user.reg
Inside of drive_c is "\Program Files" and "\Windows" if that helps you orient.
Also, regarding bottles...
did you realize that wine has self-contained packages called "bottles"?
