Jim,

It is called "bacula" :)

I have been using it for years. The setup is very involved but it can do 
pretty much anything you would expect.

I use it to back up my colo server nightly.

There are 3 components: client, director and storage nodes.

Client- the machine you are backing up
Director- the one managing the backup
Storage - the final location of the backups

As for the dated documentation, Bacula hasn't changed much in the past 
few years. It just works.
