Jim,
It depends on the environment, needs, & budget that determines the "best".
I plan on bringing my lab equipment tomorrow and haven't had time to write more labs yet so if you can make it I'll teach you how to install FreeNAS, configure iSCSI & multipathing, and then add the storage to vmware.
I'm not saying that FreeNAS is necessarily the best, but if you don't have the budget for an actual SAN and don't want to spend a bunch of time messing with the command line or logical volumes it will get the job done....plus it has native multipathing support.
Make sure you bring a laptop with Windows or has a Windows VM on it to manage the VMWare host.
