Do you mean server, or client?  pine and elm are clients, or "User
Agents"
exchange can be concidered a client depending on the context clues and
outlook is a client, but I am not sure what you mean...

for a server, qmail and sendmail are probably the most common for smtp
(I use sendmail), while I use qpopper for my POP3 server.  I don't use
IMAP so I am not sure what is available.  

for a client, I use NS Mail for my private to sort my mailing lists
easily, but I use mutt for my business mail.  There are a sh** load of
options, just depending on what you want, what options you want etc...
