It sounds more like you are asking for a GUI mail client than a
server? If so, then goto http://freshmeat.net/appindex/x11/email.html,
and pick something that you like. If you're especially fond of Outlook,
there's a package from Bynari called TradeClient that aims to emulate
Outlook in appearance and such (it doesn't exactly hit it's target, but it
comes closer than most stuff). Almost any mail client you will find will
be compatible with POP3 and SMTP, which means that they will work with any
of the common mail server's for Linux.
For the server itself, I highly recommend qmail over anything
else. It's more reliable, infinitely faster, more secure, etc. than
anything else I've ever worked with. It's a fairly radical departure in
software design from traditional mail servers (or even many traditional
UNIX applications) however, so if you go that way, take plenty of time to
read and understand the doc's.
