I'm not familiar with Outlook 2000, so I can't give you any specifics, but
you might try looking for configuration options within Outlook that control
how messages are displayed or viewed.
I have a friend who is nearly blind and he uses an odd color scheme that
allows him to see the display better on his system. When he makes the
mistake of sending html format mail to me, it usually shows up as black
text on a black background on my system - hard for me to see! But if I
simply reply to his message then I can see his original, now quoted text.
You might try configuring Outlook to send text format messages and to quote
on reply, then reply to the message you can't see and check if the original
text is now visible. If so then it is prettly likely that there is a
configuration option somewhere within Outlook that is causing the problem.
Is there a menu option in Outlook that allows you to view the original
message source? If so, and if you can view the message source and the
source looks correct, then there was nothing wrong with the message, and
the problem is in the viewing on your end.
In Outlook Express you can view message source by right clicking on the
message, selecting Properties from the menu, then selecting the Details
dialog page and clicking on the Message Source button. There is probably
something similar in Outlook 2000, but how you get to it may well be
different.
