I don't forward most messages that are sent with the wrong address.

As for Evolution, it does support Reply-To, and has for a while.  What
version are you running?  But that is not how MailMan looks at the
mail.  If you want to send mail from your evolution, you simply put the
email address you subscribed with in the "email address" field.  The
reply to is not necessary unless you want the reply to go to a different
address.

The 'From:' has to be what you subscribed as.
