Evolution does support reply-to, in versions 1.0 and 1.2, not sure about
earlier versions.  Take a look at page 35 in the following file:

or page 33 in the 1.0 manual:

	http://www.ximian.com/support/manuals/evolution_12/evolution.pdf

To summarize:

1. Open a new email message or reply to one
2. Go to the View menu in the new compose window
3. Select "Reply-To"
