Presuming you have it set up how you want it (use the 'Setup' button
from the main menu), you can create data disks as follows:

0) Start xcdroast
1) Select 'Create CD' from the main menu.
2) Select 'Master Tracks'.
3) Select the 'Master source' tab (it should be there by default).
4) Using the file browser on the right of the dialog, select
    file(s) and/or directories - using the 'Add' button to transfer
    them to the window on the left where the CD-R image is being
    created.
5) When everything you need is in the lefthand window, select
    the 'Create session/image' tab above and to the right.
6) Click on 'Calculate size' to check that the files will fit on
    the CD.   This is a highly non-intuitive step - but you have to
    do it even if you know the size of the data?!?
7) Click on 'Master and write on-the-fly'.
8) Wait....
9) Wait....
10) All done.

Easy!
