Why not just do a Debian/RH/Mandrake/whatever install, and select to 
install only the packages that you need?

Or if that's too much work, you can browse Freshmeat's distro list and 
find something suitable: http://freshmeat.net/browse/1011/?topic_id=1011

And if even that is too much work, I am sure there are more than a few 
Linux consultants on this list that would be happy to put together a 
custom distro for you for a very reasonable cost.
