[NTLUG:Discuss] Best email servers?

Seeking opinions from the gurus here...

I've been using a package called eXtremail to host email for a couple of 
domains here.  It's full-featured, but not well supported, 
non-open-source freeware.  I'm thinking about moving that server to 
something else, but I'm not sure what's best to use.

I've decided that I hate configuring Sendmail...

My other requirements would be:
- Must be able to handle both POP and IMAP (with SSL)
- Able to handle virtual domains and user accounts without OS accounts 
on the box.
- Must handle all smtp and allow remote forwarding either with password, 
or POP-before-SMTP
- Should have good support for RBLs, SpamAssassin, and Anti-virus
- Interop with a web mail package like SquirrelMail would be really nice

Any suggestions?

I was thinking about using Exim or Postfix as the MTA, and either Cyrus 
or Courier for the POP/IMAP.

Which would work best?
