As usual, it depends... if you just wanna be able to read it in
vi/emacs/joe/etc Text is fine. EML is readable by email clients and will
let you read it in a reader. HTML is junk, unless you wanna print it in
all its glory. I'd go with .eml, you can always choose another format
later, that way.
