Evolution contacts are in a Berkley DB file format.  You can run a 
multitude of scripts or Perl snippets to put the contacts in the format 
you need to get them imported into Thunderbird (I don't know what format 
Thunderbird uses).  I run strings on the contacts database and save the 
output to a file when I need to find contact information without having to 
go into Evolution.

I would assume the addressbook is either a text file or Berkley database 
as well.
