Watch the log in real time?  What else is installed?  SpamAssassin?  How
much is the network load?  Any other services also slow to respond (like
ssh)?  How much stuff is sitting in the queue?

I've experienced similar issues when a particular machine is getting
swamped with spam and or network scans.
