I would also recommend postfix.
Here is a good guide to setting up postgrey (greylistinging) and other spam
prevention techniques with Postfix:

As for webmail, I would highly, highly recommend you check out Ilohamail:

I used Squirrelmail for years and only a couple of months ago found
ilohamail. I find the interface more attractive and it is much better with
large maildirs than Squirrelmail.
