Welp - here's a solution if one day you find yourself in the same boat.

Since I had both Compiz and Beryl installed - I was able to run
the Beryl-Manager.  That allowed me to 'Select Window Manager' and
'Select Window Decorator'....and then I could 'Reload' each (with the new
settings).  This returned the Minimize, Maximize and Close bar at the
top of the windows.
