Have you considered Zimbra? It may be a bit overkill for what you're 
looking for. While it can be a pain to setup administration duties such 
as adding domains and users is a breeze. Its got a pretty heavy (read 
slow) web interface that is packed full of features I don't really use. 
I use IMAP and Thunderbird for my own mail, but my other users seem to 
like the web app.
