I took a look at the kvm site and it seems
it is too early for production use.  
I think it will be the best choice when
CentOS 6 releases, but that is not today.

I also did more reading on ESXi and it seems
it has some pretty big limitations on hardware
and does not support software RAID.

So, I guess if I need something today, I will
use Xen.  After CentOS 6, I will look to KVM.
