courier-imap requires that all folders be created beneath the
Inbox folder.  What you can do is create your Sent Items folder there
through OE (right-click on Inbox / New Folder..., etc).  Then, go to
Tools / Accounts / [account] / Properties / Advanced  Set folder root to
Inbox, and let it refresh folders.  OE will still read {mail
server}/Inbox from the root, but will read all other folders from
underneath /Inbox and map them (GUI-wise) to appear to be under the
root.
