Well, it depends what GUI library you use.  Several of them are being/have been
ported to OS-X and also run under Linux *and* Windoze - so I think it wouldn't
be hard to write a portable program from the get-go...but porting something
that is riddled with X calls and relies on KDE or something might be a lot
harder.

The GUI stuff in my games ported without change because I use my own GUI library
which renders the widgets using OpenGL and is therefore totally independent of
window manager or underlying windowing system.
