It seems like I can find a customized Linux distro for just about every application (VOIP:Trixbox; NAS:OpenFiler,FreeNAS; Firewall:Smoothwall,IPCop; IDS:EasyIDS,StrataGuard; etc) but have yet to find one specifically for video-conferencing.

The most active information I have seen lately for video conferencing
was on the SATLUG mailing list.
You can go to the website: www.satlug.org and search the mail
archives. A fellow named Jeremy Mann from UTHSCSA (UofT Health Science
Center, San Antonio) seems to be on the cutting edge. They are using
AccessGrid and tying it to a Polycom system.
May not be what you want.
